Favorite Mexican dish?

Chilaquiles. My favorites are with green salsa, good Mountain Cotija cheese, and pickled white onions. I like them with a fried egg on top, or in a bolillo as a torta on the go. The salsa, cheese, tortilla ratio is super important to not end up with dry chips, but also to avoid mushy tortillas. They are super easy to make at home in the US, but in Mexico I like the ones sold by street vendors.


Mexico's best kept secret?


Tacos acorazados de chile relleno con copia. They have two tortillas, red rice, and a guisado (a main dish). You can choose from over 15 different main dishes, including torta de papa o ejotes, chile relleno, or huevo cocido. The fixings are as important, you can choose from raw radishes, papalo quelite, rajas, habaneros encurtidos, or salsa de aguacate. Accompany with a tepache de piña for the heat of relaxing summer days.
